Sweet Sesame Glazed Roasted Carrots
Sweet and tangy roasted carrots that are perfect as a side dish or as an addition to a sushi or poke bowl.
Cook Time 50 minutes mins
- 3 lbs carrots diced
- 3 tbsp low sodium soy sauce
- 3 tbsp rice vinegar
- 1 tbsp toasted sesame oil
- 2 tbsp maple syrup
- 1 tsp garlic powder
Preheat oven to 450F and dice carrots to desired size. Place in baking dish
Mix together soy sauce, vinegar, sesame oil, maple syrup, and garlic powder and pour over carrots
Bake uncovered for 40 minutes or until liquid has cooked off and carrots are starting to brown
- Optional: You can marinate the carrots in the sauce overnight before baking or you can bake right away.
- Baking time may vary depending on how large your dice is. If the carrots are done, cooking but haven't browned, you can broil them for about 5 minutes to brown.
